Ginger Ale
Homemade, Naturally Carbonated, Lacto-Fermented
This beverage is very refreshing, and is a natural pro-biotic drink.

cup ginger, peeled and finely chopped or grated
cup fresh lime juice
- cup Rapadura (Natural Cane Sugar)
2 teaspoons sea salt
cup whey (liquid from yogurt, strained overnight, choose organic yogurt)
2 quarts filtered water

Mix all ingredients in a sterilized 2L jar, seal, and leave on counter at room temperature for 3 days. Move to fridge after three days.

Enjoy 1/2 cup at a time. Can be diluted with carbonated water, if you find the ginger taste too strong.
