EASY LENTILS
Serves 4

INGREDIENTS:
1 Cup Lentils
1 Cup Brown Rice
¼ Cup Olive Oil
2 Cloves Garlic, crushed
1/8 Cup Barley Pearls, optional
1 Carrot, finely chopped, optional
1 Celery, finely chopped, optional
1 Onion, finely chopped, optional
Sea Salt, to taste

INSTRUCTIONS:

Soak 1 cup of lentils overnight in one glass jar, and 1 cup of brown rice in another glass jar.
Strain water, and rinse, lentils and rice, putting them in separate pots.
Cook lentils in one pot, with 4 cups of water, and all ingredients, except brown rice, on medium heat for 30 minutes, or until lentils are tender.

At the same time, in another pot, cook brown rice with 1½ cups of water and a pinch of sea salt, on medium heat, for 25 minutes, or until water evaporates.

Serve together in one bowl.
