Dark Chocolate, Easy
INGREDIENTS:
1 cup organic cocoa powder
1/4 cup organic coconut oil
1/4 cup organic cocoa butter, optional
3 tablespoons honey
1/2 teaspoon vanilla extract
DIRECTIONS:
Gently melt coconut oil in a saucepan over medium-low heat.
Stir cocoa powder, honey, and vanilla extract into melted oil until well blended.
Pour mixture into a candy mold or pliable tray.
Refrigerate until chilled, about 1 hour.
Cut into pieces.
ALTERNATIVES:
After melting coconut oil, cocoa powder, honey, and vanilla together, you can add some flavour by adding orange zest, peanut butter, dried coconut, chopped nuts, cinnamon, cayenne pepper, dried fruits, etc. to taste.
Must be kept refrigerated. Cocoa butter will help keep the chocolate firmer than coconut oil alone, but keeping your home made chocolate refrigerated works well. For a firmer chocolate, add 1/8 cup natural bees wax. Commercial chocolate often uses carnauba wax, amongst other less desirable ingredients, to both make the bar better resistant to melting, but also to cut down on manufacturing costs. Cheating you out of a healthy treat in the process. It's so easy to make your own, why would you settle for a lower commercial grade candy bar?
