Vegan Paleo Nut Energy and Protein Bars
These bars pack a punch of nutty goodness with a touch of sweetness coming from the dates. Great for an afternoon snack, or anytime. You can use half the dates, or dry figs, if you prefer less sweetness.
Ingredients
¼ cup organic flaxseed, ground and soaked in ¾ cup water for 10 minutes
1 cup organic almonds, chopped
2 cups organic pumpkin seeds, finely chopped
2 cups organic walnuts, chopped
½ cup organic unsweetened shredded coconut
½ cup organic hemp seeds
1 cup dates, finely chopped
2 tsp cinnamon
½ tsp vanilla extract
Instructions
- Preheat oven to 350 degrees. Lightly grease a 9×13 pan.
- Grind flax seeds, and add water, stir and let set for 10 minutes.
- Put pumpkin seeds in food processor and process into small bits. Add in the rest of the nuts and continue to process until dates are chopped. Add flax seed mixture, cinnamon and vanilla and pulse until well blended.
- Press the mixture into the baking pan and bake it at 350 degrees for 18-20 minutes. I cut them right away by pressing in the end of the spatula to make rectangular shapes. Let cool before moving to container.
Yield: 24 bars
Storage: I store my vegan paleo nut bars in a Tupperware on the counter, but they also freeze well for longer periods of time, or to hide them from sight. They can be eaten cold out of the freezer or room temperature.
Notes: You can use a mixture of any type of nut you like. This recipe was altered from the original with my nut preferences, for protein and nutritional content. I also doubled the dates from the original to make them stand out more, but this could be on account of the bitterness nature of pumpkin and walnuts, which I use more heavily in this recipe. We try to use only organic ingredients, where possible, but you can of course use conventional non-organic goods as well if you prefer.
