Coconut Pie Health Conscious Recipes Awakken Naturals
Coconut Pie
This recipe is very simple and works with freshly grated coconut!

Ingredients
1–1/4 cups almond milk or whole milk
1 cup sugar
3-1/2 cups fresh grated coconut or 2-1/2 cups sweetened coconut flakes
2 large eggs, beaten lightly or 3 flaxseed eggs
3 Tablespoons All-Purpose Flour
2 Tablespoon Olive oil or melted butter
1 Tablespoon Cinnamon powder
1/2 teaspoon Vanilla Extract
1 unbaked pie shell 9 inch

Instructions
Beat eggs, sugar, milk, flour, oil or butter, vanilla and cinnamon in a large mixing bowl.

Add coconut and mix in well with a fork.

Pour mixture into 9 inch pie shell.

Bake at 350F degrees for 50-60 minutes.

Pie is done when knife inserted in middle pulls out clean. The pie filling will rise slightly during cooking and contract again as it cools. This is normal.

Place on wire rack to cool.
